Pai Mu Tan (also called 'Bai Mu Dan' or 'White Peony') is a white tea produced in the Fujian Province of Eastern China. The tea is made from the bud and first leaves of the Da Bai (Great White) varietal of tea bush. Once picked, the leaves are laid on large blankets in the sun to wither and dry naturally.
Pai Mu Tan is very popular in China, particularly during the hotter months, as it has excellent thirst-quenching properties. Expect a light, very delicate liquor with floral aromas.
